I got curious and wrote a simulation for this. It's very slightly different though. In my simulation, the mark and the scammer make their color choices without removing 3 cards each from the deck. I don't think that makes much of a difference.

In my simulation, one game is one run-through – the mark picks their colors, the scammer picks their colors, and they go through the deck. Each run of the simulation plays out a million games. I ran the simulation a few times and always got the following results:

A hair over 90% of the time, the scammer won. A hair over 5% of the time, the mark won. A hair under 5% of the time, there was a tie.

I conclude that you're not guaranteed to win but the chances are very good.

If you really want to make money, let them win the first time by picking something like red red red, and then bet more money then you did the first time and actually win the bet by following the steps. I've made 50$ off of this trick.
